After graduating from the Hotel Management School The Hague, Roland Peijnenburg became the owner of Restaurant De Zwaan in Etten-Leur in 1991. Together with his team, he earned a Michelin star within three years – an achievement he managed to maintain for 27 consecutive years, until the restaurant was sold in 2020.
Working under constant pressure, managing extreme expectations, and striving to improve every single day: that was his reality for almost three decades.
